No Bake Cookies

No Bake Cookies are always a good idea. They are so easy to make, and SO yummy you will be reaching for more. These cookies have a sugary, chocolate peanut butter flavor with a chewy, fudgey texture. Like the name implies, you do not have to bake them. Just Set them on the counter to chill and you are golden!

Growing up, for some reason we called these cookies “dinosaur cookies” in my household. I am not sure why, other than I guess they look a little earthy? Either way, it made them even more exciting and they were always such a fun treat. I remember making huge ones sometimes so that when we were told we could have “one cookie” after dinner, we would get to have a mega cookie and it technically be one. These cookies remind me of the simple fun of childhood and they are simple and fun to make. You willl love them!

Ingredients You’ll Need:

Servings: 2 dozen

Active Time: 20 Total Time: 50 minutes

For these No Bake Cookies you will need:

  • 2 cups of white sugar – Duh.
  • 1/2 cup of salted butter
  • 1/2 cup of milk – I prefer whole milk here to keep these cookies rich and fudgey.
  • 1/4 cup of unsweetened cocoa powder – For the chocolatey goodness.
  • 2/3 cups of creamy peanut butter – For the peanut buttery goodness.
  • 1 teaspoon of vanilla extract – To add some extra delight to the flavor
  • 3 cups of quick oats – To hold everything together.

How to Make No Bake Cookies:

Step 1. Add the 1/2 cup of butter, 2 cups of sugar, 1/2 cup of milk, and 1/4 cup of cocoa powder to a medium sized sauce pan and place on the stove on medium heat. Allow it to reach a boil and boil for 1 minute and then remove the pan from heat.

Step 2. Stir in the 2/3 cups of peanut butter and 1 teaspoon of vanilla extract.

Step 3. Stir in your 3 cups of quick oats until evenly mixed.

Step 4. Line 2 baking sheets with parchment paper and drop your cookie mix onto the sheet in around 1.5 to 2 tablespoon sized scoops.

Step 5. Allow the cookies to cool in the refrigerator for 20-30 minutes and they will be ready to go!
