Chocolate Covered Strawberries

Chocolate covered strawberries are a delectable delight! You can never go wrong with the combination of chocolate and strawberries. This chocolate covered strawberry recipe makes it so easy and gives you perfectly smooth chocolate that is soft to bite into. They are so fun to make that just making them can be turned into a date. My husband and I love to make these every year around Valentine’s day and we get to enjoy them for days after.

Equipment You’ll Need:

A double boiler is helpful here, but if you do not have one, the instructions will walk you through how to create one with regular pots.

For these chocolate covered strawberries you will need:

  • 1 pound of fresh strawberries with the leaves on them – If the stem is still included that is even better as it gives a good place to hold them when eating.
  • 10 ounces of chocolate chips – You can use milk chocolate, white chocolate, or what I like to do is use half of each.
  • 1 tablespoon coconut oil – you can also use shortening

How to Make Chocolate Covered Strawberries:

Step 1. Start by washing and drying your strawberries. Make sure to dry them VERY well as this will keep the chocolate from falling off of them.

Step 2. Take out a double boiler, or 2 if you are using both chocolate and white chocolate. If you do not have a double boiler, create one with a larger pot for the bottom boiler, and a smaller pot or heat safe glass for the top boiler. Make sure the top boiler is small enough to fit in the bottom boiler, but large enough to be suspended at least 2 inches from the bottom of it.

Step 3. Line a tray with parchment paper and set it aside for when you are removing you strawberries from the chocolate.

Step 4. Add 2 inches of water to the bottom boiler/pot, bring to a boil, then reduce to a simmer and add the top boiler/pot along with the chocolate chips and 1 tablespoon coconut oil (divide if using 2 boilers). Stir the chocolate, and once it is mostly melted, turn the heat off entirely and stir until fully melted. This method will keep the chocolate smooth.

Step 5. Now that your chocolate is melted, you will start dipping your strawberries. For each strawberry, grab it by the stem and dip it into the chocolate. Twist the strawberry as you lift it out and allow some of the excess chocolate to drip off for a moment. Set it on the parchment paper tray and repeat with all of your strawberries.

Step 6. If you would like to decorate your strawberries further, now is the time to do so. You can add crushed cookies, nuts, or shredded coconut to them. You can also use a butter knife or a plastic bag with a small hole in the corner to drizzle your 2nd kind of chocolate onto the strawberries.

Step 7. Place the tray of strawberries in the refrigerator for 30 minutes to set.

Pro Tips:

Using coconut oil in your chocolate will help it to melt more smoothly and will make it softer and shinier when it dries on your strawberries.

It is important to not let your chocolate get too hot when melting, or it will become thick, stiff, and not as smooth. Prevent this by not allowing the top pot of your double boiler to touch the hot water, and but using the lowest heat you can that still allows the chocolate to melt.

If you do not have a stove, you can melt your chocolate in the microwave. Add the chocolate chips and oil to a bowl and microwave in 30 second increments, stirring well in between, until it is fully melted.

Be sure to store these in the refrigerator. These chocolate covered strawberries are best when eaten within 48 hours, but they can store for several days in the refrigerator.
