Ingredients You’ll Need:

Servings: 6

Active Time: 10 minutes Total Time: 50 minutes

For these Crispy Smashed Potatoes you will need:

  • 1.5 pounds of golden baby potatoes – These are my favorite to use and are so buttery and good!
  • 2 tablespoon of olive oil – Along with the rich flavor this adds, it also helps to keep your potatoes and parmesan from burning at high temps.
  • 1 tablespoon of butter – For more buttery goodness.
  • 1 teaspoon sea salt + more for sprinkling
  • 1/2 teaspoon ground pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup grated parmesan – Absolutely essential for the flavor and texture.
  • 1 tablespoon finely chopped parsley – Slightly for the flavor, most because it’s pretty.

How to Make Crispy Smashed Potatoes:

Step 1. Wash your potatoes and place them in a large pot. Fill with water until about 1 inch over the potatoes and add a pinch of salt. Cover and bring to a boil for 15-20 minutes, until soft. You can test this by stabbing one with a fork.

Step 2. While your potatoes are boiling, preheat your oven to 425 degrees F. Grab a baking sheet and spread about 1 tablespoon of olive oil on it.

Step 3. In a small bowl, melt 1 tablespoon of butter, and then add 1 tablespoon of olive oil, 1 teaspoon of sea salt, 1/2 teaspoon pepper, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/2 cup grated parmesan. Mix together.

Step 4. Once your potatoes are soft, drain the water and allow them to sit for about 5 minutes to cool. Then add them to the oiled tray and spread them out.

Step 5. Using the bottom of a heat safe cup or measuring glass, smash each potato until they are around 1/4 inch tall. Then use a small spoon to spread the mixture you made onto the top of each.

Step 6. Place these in the oven for 15-20 minutes, until they are golden and crispy.

Step 7. Sprinkle a little more sea salt and a little bit of finely chopped parsley, and then use a spatula to remove them from the pan.

Enjoy!
