
This Ritz Cracker Chicken is on my list of favorite meals. It is so easy to make and SO yummy, you will be going back for seconds. It’s also just fun to make dinner out of crackers. And the gravy. THE GRAVY. It is just so, so good. It is the perfect pair for the chicken and has a delicious, creamy, chickeny taste.
You absolutely HAVE to pair this chicken with my super Easy Parmesan Noodles on the side. I’m pretty sure it’s a law. I’m just the messenger. So go ahead and get yourself some Ritz crackers, if you don’t have some already, and whip this up for a new family go-to dinner!

For this Ritz Cracker Chicken recipe you will need:
For the Chicken:
- 3 chicken breasts
- 2 sleeves of Ritz crackers
- 2 eggs
- 2 tablespoons of salted butter
- 2 tablespoons of oil
For the Gravy:
- 1 cup of whole milk
- 1/2 cup of half and half
- 2 tablespoons of salted butter
- Salt (to taste)
- Pepper (to taste)
- 2 tablespoons of flour
- 2 tablespoons of corn starch
- 2 chicken bouillon cubes
How to Make Ritz Cracker Chicken
For the Chicken:
Step 1. Grab 2 sleeves of Ritz crackers and crush them into large crumbs. Crushing them with your hands is the easiest but you can also use a fork or even a food processor. Put the crumbs into a large bowl.
Step 2. Crack your 2 eggs in a bowl and whisk them.
Step 3. Heat a large pan on the stove on medium heat and add 2 tablespoons of salted butter and 2 tablespoons of oil. I usually use vegetable oil so there is no other flavor coming in but you can use whatever you prefer.
Step 4. Cut the 3 chicken breasts into a few pieces (about 4 per breast). You may want to flatten the thicker parts to make them more even. I like to cut them diagonally to make triangle pieces.
Step 5. Dip the chicken pieces into the egg mixture, and then into the Ritz cracker crumbs. Press each side firmly into the crumbs to get the chicken fully coated. Set each piece aside until they are all ready.
Step 6. Make sure the oil and butter are well mixed in the pan and add the chicken. Make sure the pieces are not touching if possible. You may need to do 2 batches. Cook until the chicken is golden, about 5-7 minutes per side. Be careful not to cook it too long or the crackers will burn and the chicken will not be as juicy.
For the Gravy:
Step 7. Set a medium sized pan on medium-low heat and add 1/2 a cup half and half, 2 tablespoons of butter, and salt and pepper to taste. Crumble in the 2 chicken bouillon cubes and give it a stir.
Step 8. While the butter is melting, grab a separate bowl and add in 1 cup of milk, 2 tablespoons of flour, and 2 tablespoons of corn starch. Use a fork and mix it together until no clumps remain. If you do not have cornstarch you can substitute with more flour. The only downside is that there will be just a tiny bit more of a floury taste. Slowing pour the mixture in the pan, stirring as you go. The bottom will start to firm up first so stir it regularly. Don’t worry about clumps because we will blend it soon. Using a rubber spatula is the best option here.
Step 9. Once the gravy has thickened up, turn off the heat and transfer it a blender. Blend until smooth and then transfer back into the pan and cover until ready to serve. You want to leave the heat off unless you need to reheat before serving, or it will get too thick.

Pro Tips:
- Blending the gravy: I like to use a bullet blender instead of a full sized blender. You will want to remove the lid slowly, but immediately after blending as the heat from the gravy will cuase pressure to build up. Open it too fast and you’ve lost your sauce!

Meal Prepping:
You can make the gravy ahead of time and reheat it when ready to make. You can also cut and flatten your chicken pieces, and prepare your crushed crackers.
