Equipment You’ll Need:

For this recipe you will need a blender and a muffin tin.

Ingredients You’ll Need:

For this Healthy Chocolate Berry Dessert Bite recipe you will need:

  • 1.5 cups frozen berries – This will serve as the base of your berry bites
  • 1/2 cup plain greek yogurt – This will add a bit of creaminess to your berry base.
  • 1/3 – 1/2 cup milk – Add just enough to where your mix is blend-able. You will need to add more if you are using a thicker greek yogurt.
  • 2/3 cup peanut butter powder – This is a healthier version of peanut butter that has less fat, less calories, and more protein.
  • 2/3 cup water – This is to mix with the peanut butter powder.
  • 1/2 cup sugar free chocolate chips – the sugar free aspect is optional but is part of what makes these healthy.
  • 1 tablespoon coconut oil – To melt with the chocolate chips and make it spreadable. Coconut oil pairs very well with the sweetness compared to other common oils.

How to Make Healthy Chocolate Berry Dessert Bites:

Active Time: 15 minutes

This will make 12 berry bites:

Step 1. Add your 1.5 cup of frozen berries, 1/2 cup of greek yogurt, and 1/3-1/2 cup of milk to a blunder and blend it up. You will want to start with 1/3 cup of milk and add more if it is too thick to blend. If you are using a thicker greek yogurt would need more.

Step 2. Grab your muffin tin and pour the berry mix evenly into each tin. You can flatten them out a bit with the back of a spoon. Then place them flat in the freezer for about 20 minutes. This will allow them to freeze enough to add you next layer evenly.

Step 3. While your berry bases are freezing, you will prep your peanut butter layer. In a bowl, mix 2/3 cup of peanut butter powder with 2/3 cup of water. This will result in 2/3 cup of peanut butter. You want it to be a little bit runny so that it can easily settle into a flat layer on top of the berries.

Step 4. Remove your muffin tin from the freezer and pour on your peanut butter layer. Spread evenly and put back in the freezer for another 20 minutes.

Step 5. While the peanut butter layer is getting solid, you will prep your final and most delicious layer: the chocolate. Into a mug, add 1/2 cup of sugar free chocolate chips and 1 tablespoon of coconut oil. Microwave this for 30 second increments until it melts when mix. Mix well with a spoon.

Step 6. Remove your muffin tin from the freezer and pour your chocolate evenly onto each bite. You can use the back of a spoon to help spread it. You will now put it back in the freezer for at least 3 hours to allow it to fully freeze. Once frozen, use a butter knife to remove the bites and transfer them to an airtight container in the freezer.

Enjoy!

Pro Tips:

  • Don’t leave these in the muffin tin in the freezer for longer than overnight or they may get freezer burned.
  • If you would like to sweeten these up some you can add some honey into your blend mix.
  • Once ready to eat, allow them to thaw at room temperature for 5-10 minutes so they can slightly soften.

Substitutions:

If you are using regular peanut butter instead of powdered, use 2/3 cup.

What To Do With The Leftovers:

Storing:

Store these in an airtight container in the freezer for up to a year.
