Banana Chocolate Chip Pancakes

If the only thing that you know about banana pancakes is that Jack Johnson song, you are in the right place. They are so easy, a healthier alternative to regular pancakes, and such a yummy way to start your day! If you have some bananas laying around that you don’t want to o bad, banana bread does not have to be your only option. This Banana Chocolate Chip Pancakes recipe takes classic banana pancakes and adds in a sprinkle of chocolate for those of us with a sweet tooth!

Ingredients You’ll Need:

Prep Time: 10 minutes Total Time: 20 minutes

For this Banana Chocolate Chip Pancake recipe you will need:

  • 1 cup of all-purpose flour
  • 1 tablespoon of brown sugar
  • 1 tablespoon of baking powder
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of cinnamon
  • 3/4 cup of mashed, over-ripe bananas – about 1.5 large bananas
  • 1 egg
  • 3/4 cup of milk
  • 1/2 cup of chocolate chips
  • Butter – for cooking and for serving
  • Banana slices – for serving
  • Maple syrup – for serving

How to Make Banana Chocolate Chip Pancakes:

Step 1. In a medium sized bowl, mix together the dry ingredients: 1 cup of all-purpose flour, 1 tablespoon of brown sugar, 1 tablespoon of baking powder, 1/4 teaspoon of salt, 1/4 teaspoon of cinnamon.

Step 2. In a separate, small bowl, us a fork to mash up bananas until you have 3/4 cup. Add in 1 egg and 3/4 cup of milk and thoroughly mix together. It will be slightly lumpy from the bananas. Add this batter to the dry mix and mix just until combined.

Step 3. Put a large pan or griddle on medium heat. Allow it to heat up while you work on the next step.

Step 4. Put 1/2 cup of chocolate chips onto a cutting board and cut them into smaller pieces. Fold the chocolate into the batter.

Step 5. Once the the pan or griddle is hot, use a 1/3 measuring cup to scoop circles of batter onto the pan or griddle. Leave some space in between them. In 2-3 minutes, once the edges have some bubbles and the bottom is turning golden, flip the pancakes. Allow them to to cook on the other side for another 2-3 minutes before transferring to a plate.

Step 6. Serve with some melted butter, banana slices on top, and maple syrup.

Storing:

Store these safely in the refrigerator for up to 5 days.

Reheating:

Reheat these on the stove or even in the toaster, but no in the microwave as they will likely become a bit rubbery.

For stove heating: Put a dry pan on medium heat and cover with a lid for 5-7 minutes.

For toaster heating: Toast each pancake for 1-2 minutes. This is the fastest way to get a good reheat!

Meal Prepping:

For an easier morning, make this batter ahead of time and store in the fridge in a covered ccontainer for up to 2 days. Just give it a quick mix before using it.
