These Bell Pepper Eggs are one of the easiest breakfast recipes and will make you feel like a glowy health guru. It is savory and full of flavor. It is also super cute and colorful which is of course very important as well. You can eat it by itself or on toast so that you can soak up the runny egg. Add this to your weekly breakfast rotation!

Ingredients You’ll Need:

For Bell Pepper Eggs you will need:

• Eggs – 1 egg per serving
• Bell pepper – any color
• Salt
• Pepper
• Toast – optional

How to Make Bell Pepper Eggs:

Step 1. Start by slicing horizontal rings from your bell pepper about 1/4 inch thick and place them on a lightly buttered pan on medium-low heat. You can use any color bell pepper you would like here. I usually avoid the green ones because they are more bitter but go with what you would like.

Step 2. Crack an egg directly into the middle of each bell pepper ring. Sprinkle your eggs with salt and pepper and let them cook for at least 5 minutes or longer if you do not want a runny egg. To make sure the white cooks all of the way through, steam your egg by adding some water to the edges of the pan and covering it while cooking. If you have large eggs, they may spill over a bit. If the egg goes out of the sides of the bell pepper, simply wait for it to finish cooking and trim off the excess egg white.

Step 3. Remove your bell pepper egg from the pan and either plate it directly, or add it onto a piece of toast.
