- Eggs – 1 egg per serving
- Bell pepper - any color
- Salt
- Pepper
- Toast – optional
Slice horizontal rings from your bell pepper about 1/4 inch thick and place them on a lightly oiled pan on medium-low heat.
Crack an egg directly into the middle of each bell pepper ring. Sprinkle your eggs with salt and pepper and let them cook for at least 5 minutes or longer if you do not want a runny egg. To make sure the white cooks all of the way through, steam your egg by adding some water to the edges of the pan and covering it while cooking.
Remove your bell pepper egg from the pan and either plate it directly, or add it onto a piece of toast.Enjoy!
