Zesty Pesto Eggs and Toast

This is an AMAZING spin on eggs and toast. The feta is bright and tangy and is a great balance with the creaminess of the egg. The touch of crushed red pepper flakes adds an incredible punch of flavor. The egg yolk runs over the whole thing when uyou bite into it. These Zesty Pesto Eggs and Toast will be one of your new favorite breakfasts

Ingredients
  

  • A slice of bread.
  • 1-2 tablespoons of pesto
  • An egg
  • 1 tablespoon of crumbled feta cheese
  • Salt and pepper - a sprinkle of each.
  • Crushed red chili flakes - a light sprinkle

Instructions
 

  • Add your egg to an oiled pan on medium heat and sprinkle with salt, pepper, 1 to 2 tablespoons of crumbles feta, and a sprinkle of crushed red chili flakes. Cover your pan and allow it to cook until the white is cooked through and the yolk is still runny.
  • Toast your bread and add a layer of pesto, using 1 to 2 tablespoons.
  • Once your egg is cooked, add it to your toast and your are ready to dig in!

Notes

Adding a slight amount of water around the edges of the egg before covering will steam it and help the egg white to cook all of the way through.
